Ingredients

  • 1 whole chicken carcass or 2–3 lbs chicken bones (raw or cooked)

  • 1 large onion, quartered

  • 2–3 carrots, cut into chunks

  • 2–3 celery stalks, cut into chunks

  • 3–4 garlic cloves, smashed

  • 1–2 bay leaves

  • A few sprigs of fresh thyme or 1 tsp dried

  • 8–10 whole peppercorns

  • Salt to taste

  • Water to cover (about 12 cups)

Optional Herb Add‑Ins (choose 1–3 depending on flavor)

  • Rosemary: 1 small sprig (strong flavor — use lightly)

  • Marjoram: ½–1 tsp dried or a small fresh sprig

  • Oregano: ½–1 tsp dried or a small fresh sprig

  • Basil: 3–4 fresh leaves or ½ tsp dried

These add depth and can shift the broth toward Italian, rustic, or herbal profiles

Directions

Stovetop Instructions

  1. Add chicken bones, vegetables, garlic, bay leaves, thyme, peppercorns, and any optional herbs to a large stockpot.
  2. Cover with water.
  3. Bring to a gentle boil, then immediately reduce to a low simmer.
  4. Simmer uncovered for 4–6 hours (or up to 12 for richer stock).
  5. Skim foam or fat as needed.
  6. Strain, taste, and add salt if needed.
  7. Cool completely, then refrigerate.

Crock Pot (Slow Cooker) Instructions

  1. Add all ingredients to a large slow cooker.
  2. Fill with water to the max‑fill line.
  3. Cook on Low for 10–12 hours or High for 5–6 hours.
  4. Strain, season, cool, and store.

This method gives a mellow, steady extraction — great for overnight broth.

Pressure Cooker (Instant Pot) Instructions

  1. Add all ingredients to the pot.
  2. Fill with water to just below the max line.
  3. Seal and cook on High Pressure for 60–90 minutes.
  4. Allow natural release for best clarity and flavor.
  5. Strain, season, cool, and store.

This produces a deep, rich broth in a fraction of the time.

Storage

  • Refrigerator: 4–5 days
